I LOOOVE breakfast casseroles. Our normal 'go-to' is so tasty! But, I was really looking to try something new. I wanted to find a good one that included hashbrowns. So, if you're looking for a hearty breakfast {or dinner!} here's a good one to try out.
Ingredients:
16 oz breakfast sausage
1 pkg. refrigerated shredded hash browns
1 doz. eggs
10 oz. can cream of mushroom soup
10 oz. can Rotel, drained
8 oz pkg. shredded cheddar cheese
In a large skillet, crumble and brown sausage over medium heat. Drain and set aside. In same skillet, scramble eggs. Preheat oven to 350. In buttered 9x13 baking dish, layer in order: hash browns, sausage, eggs, soup (mix with milk if needed to help spread), and tomatoes. cover with foil and bake for 20-25 minutes. Uncover and sprinkle with cheese on top. Return to oven for 5 minutes or until cheese is melted. Makes 8-10 servings.
